Chicken-Dumpling Stew


  • 1 (2 to 3 pound) chicken, cut up
  • 2 tablespoons butter
  • 1/2 cup water
  • 1 cup sliced onion
  • 1 cup sliced carrot
  • 1 cup sliced celery
  • 1/4 teaspoon poultry seasoning
  • 1 can cream of chicken soup
  • 1 (10 ounce) package frozen mixed vegetables
  • 1 cup Bisquick or homemade Biscuit Mix
  • 1/3 cup milk


  1. Sprinkle chicken with 1/2 teaspoon salt and a dash of pepper. Brown in butter in large, heavy pan.
  2. Add water, onion, carrot, celery and poultry seasoning, cover and simmer for 30 minutes.
  3. Stir in soup and mixed vegetables, bring to boil, cover and simmer for 10 more minutes, stirring now and then.
  4. Combine biscuit mix and milk; spoon dumplings onto stew. Cook uncovered for 10 minutes.
  5. Cover and cook 10 minutes longer.
