Forgotten Pork Stew

Ingredients

  • 1 1/2 pounds pork stew meat, cut into 1 inch cubes
  • 3 medium carrots, cut into 3/4 inch pieces
  • 3 medium potatoes, peeled and quartered
  • 2 stalks celery, sliced
  • 1 medium onion, chopped
  • 1 (10 ounce) package frozen lima beans, thawed
  • 1 can condensed tomato soup
  • 1/2 cup water
  • 2 tablespoons quick-cooking tapioca
  • 1 teaspoon salt
  • 1/2 teaspoon dried basil, crushed
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon ground red pepper

Instructions

  1. In a Dutch oven combine meat, carrots, potatoes, celery, onion and lima beans.
  2. Combine tomato soup, water, tapioca, salt, basil, garlic powder and red pepper. Add to Dutch oven; stir to combine.
  3. Cover and bake at 325 degrees F for 2 to 2 1/4 hours or until meat and vegetables are tender.
