Sourdough Sandwich Loaves

Sourdough sandwich bread is excellent for making any type of grilled sandwiches, bruschetta or simply cold sandwiches. Many of us like it toasted or untoasted with butter and jam.

Sourdough Sandwich Loaves recipe

Prep: 30 min | Bake: 45 min | Yield: 2 loaves

Ingredients

  • 2 2/3 cups lukewarm water (110 degrees F)*
  • 2/3 cup sourdough starter
  • 1/3 cup granulated or cane sugar
  • 8 cups bread flour
  • 1 tablespoon Kosher salt
  • 3 tablespoons olive oil (for greasing pans)
  • 3 tablespoons butter (for brushing on top)

Instructions

  1. In a large non-metallic bowl, combine the water, sourdough starter and cane sugar. Whisk with a silicon whisk until completely dissolved.
  2. Add the flour and salt and mix until well combined.
  3. Cover the dough with plastic wrap. Let it rest for 30 minutes.
  4. Stretch and fold the dough.
  5. Cover it with plastic wrap and let it rest at room temperature for 12 hours or until the dough is light and fluffy.
  6. Divide the dough into two equal parts. Stretch each one into a rectangular shape. Press down the dough with your fingers to get rid of any extra bubbles.
  7. Roll the dough into logs. Place them into oiled bread pans.
  8. Repeat with second half of dough. Let loaves rise for about one hour.
  9. Bake the bread at 375 degrees F for about 45 minutes or until the tops are golden brown.
  10. Remove the pans from the oven. Brush the tops with butter. Let rest for 5 minutes.
  11. Move the pans to a cooling rack and let them rest for 30 minutes before removing and slicing the loaves.

Notes

* If the water is too hot, it may kill the starter.
