Mesquite Bean Cakes


  • 6 cups ripe, dried mesquite beans
  • Water


  1. Grind mesquite beans with a mortar and pestle until they reach a flour-like consistency.
  2. Add enough water to achieve a stiff dough.
  3. Pat the dough flat, cut it into squares, and dry the squares in the sun.
  4. Serve with milk or coffee.
