Santa Fe Meatloaf

Ingredients

  • 2 pounds ground pork
  • 1 tablespoon vegetable oil
  • 1 onion, finely diced
  • 4 cloves garlic, minced
  • 1 jalapeno pepper, seeded and minced
  • 1/4 cup minced dried tomatoes
  • 2 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 1 1/2 teaspoons salt
  • 1 teaspoon thyme
  • 2 teaspoons black pepper
  • 1/4 cup chopped parsley
  • 1/2 cup bread crumbs
  • 1/2 cup milk


Instructions

  1. Sauté onion, garlic and jalapeno in oil about 10 minutes; let cool slightly.
  2. Combine with all other ingredients and mix thoroughly.
  3. Place mixture in 9 x 4-inch loaf pan.
  4. Bake at 350 degrees F for 1 1/2 hours.
  5. Serve with mashed potatoes and gravy.
