Tortilla Dinner

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup yellow cornmeal
  • 1/4 teaspoon salt
  • 1 egg
  • 1 1/2 cups cold water
  • 1 pound lean ground beef
  • Tomatoes, chopped
  • Onions, chopped
  • Green bell pepper, chopped
  • 1 pound cheese, grated
  • Lettuce, thinly sliced

Instructions

  1. Combine flour, cornmeal, salt, egg and water in a large bowl, then beat.
  2. Spoon 3 cups of batter onto a moderately hot ungreased griddle, flattening with the bottom side of a spoon to make thin (1/4-inch) pancake. Turn tortilla when edges become dry, but not browned, and cook on other side. Set aside.
  3. To complete meal, brown ground beef.
  4. Reheat tortillas on a hot griddle with oil until lightly browned.
  5. Place a portion of tomato, onion, bell pepper, cheese and lettuce on top of each tortilla; roll and enjoy!
