Mexican Spoonbread
The addition of several ingredients certainly gives new life to ordinary spoonbread.
Ingredients
- 1 can creamed corn
- 3/4 cup milk
- 1/3 cup melted Crisco
- 2 eggs, slightly beaten
- 1 cup cornmeal
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 1 (4 ounce) can chopped green chiles
- 2 cups grated cheese, divided
Instructions
- Heat oven to 350 degrees F. Grease a 9 inch square baking pan.
- Thoroughly mix the corn, milk, Crisco, eggs, cornmeal, baking soda and salt.
- Pour half the batter into the pan.
- Spread chiles over batter.
- Sprinkle 1 cup grated cheese over chiles.
- Pour remaining batter on top.
- Sprinkle with additional 1 cup grated cheese.
- Bake for 40 minutes.
