Mexican Spoonbread

The addition of several ingredients certainly gives new life to ordinary spoonbread.

Mexican Spoonbread

Ingredients

  • 1 can creamed corn
  • 3/4 cup milk
  • 1/3 cup melted Crisco
  • 2 eggs, slightly beaten
  • 1 cup cornmeal
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1 (4 ounce) can chopped green chiles
  • 2 cups grated cheese, divided

Instructions

  1. Heat oven to 350 degrees F. Grease a 9 inch square baking pan.
  2. Thoroughly mix the corn, milk, Crisco, eggs, cornmeal, baking soda and salt.
  3. Pour half the batter into the pan.
  4. Spread chiles over batter.
  5. Sprinkle 1 cup grated cheese over chiles.
  6. Pour remaining batter on top.
  7. Sprinkle with additional 1 cup grated cheese.
  8. Bake for 40 minutes.
