Pueblo Blue Cornbread

Ingredients

  • 1 small onion, minced
  • 2 tablespoons lard or bacon fat
  • 1 cup blue cornmeal
  • 1 cup unbleached flour
  • 1 teaspoon salt
  • 1 tablespoon baking powder
  • 1 cup milk
  • 2 eggs, beaten
  • 1 cup pork cracklings
  • 1/4 cup minced jalapeño
  • 1/3 cup grated Monterey Jack cheese

Instructions

  1. Heat oven to 450 degrees F.
  2. In a cast iron skillet, sauté onion in the lard.
  3. Mix together cornmeal, flour, salt and baking powder.
  4. Add onion and remaining ingredients; pour the mixture into the hot frying pan.
  5. Bake for 20 to 25 minutes.
  6. Cut into wedges to serve.
