Sopaipillas Sonora

Yield: 50 to 60 sopaipillas

Ingredients

  • 4 cups all-purpose flour
  • 1 1/4 tablespoons salt
  • 3 tablespoons baking powder
  • 3 tablespoons granulated sugar
  • 2 tablespoons shortening
  • Milk
  • Vegetable oil for frying

Instructions

  1. Sift flour, salt, baking powder and sugar. Cut in shortening and add just enough milk to make a soft dough, just firm enough to roll.
  2. Cover bowl and let dough rest 30 to 60 minutes. Roll 1/4 inch thick on lightly floured board and cut in diamond-shaped pieces.
  3. Heat 1 inch of oil in a frying pan to approximately 370 to 380 degrees F. Add a few pieces at a time.
  4. Turn at once so they will puff evenly on both sides; then turn back to brown on both sides.
  5. Drain on paper towel.
  6. Sprinkle with powdered sugar or cinnamon-sugar mixture.
