Grilled Chicken Yucatan-Style

Ingredients

Chicken

  • 1 fryer chicken, cut into parts

Marinade

  • 1 cup fresh orange juice
  • 2 tablespoons olive oil
  • 1 teaspoon orange zest
  • 4 cloves garlic, chopped
  • 1/2 teaspoon thyme
  • 1/2 teaspoon oregano
  • 1/2 teaspoon marjoram
  • 4 bay leaves, crumbled
  • Salt to taste
  • Pepper to taste

Instructions

  1. Combine all marinade ingredients and marinate chicken parts overnight.
  2. Grill over moderate heat, turning a few times, to desired doneness.
