Grilled Chicken Yucatan-Style
Ingredients
Chicken
- 1 fryer chicken, cut into parts
Marinade
- 1 cup fresh orange juice
- 2 tablespoons olive oil
- 1 teaspoon orange zest
- 4 cloves garlic, chopped
- 1/2 teaspoon thyme
- 1/2 teaspoon oregano
- 1/2 teaspoon marjoram
- 4 bay leaves, crumbled
- Salt to taste
- Pepper to taste
Instructions
- Combine all marinade ingredients and marinate chicken parts overnight.
- Grill over moderate heat, turning a few times, to desired doneness.
