Tamale Pie
Yield: 8 to 10 servings
Ingredients
- 2 pounds ground beef
- 1 medium onions, chopped
- 1 green bell pepper, chopped
- 1 (4 ounce) can green chiles, chopped
- 5 tablespoons chili powder
- 1 small can chopped ripe olives
- 1 can whole kernel corn, drained (optional)
- 2 cans tomatoes
- 1 1/2 cups cornmeal mixed with 1 1/2 cups cold water
- 3 cups boiling salted water
- 2 cups grated sharp Cheddar cheese
Instructions
- Brown meat with onions.
- Add bell pepper, chiles, chili powder, olives, corn (if using) and tomatoes, and simmer for about 30 minutes.
- Boil cornmeal mix in water, stirring constantly until thick (about 5 minutes). Spread in bottom of a 13 x 9-inch casserole dish. Cover with meat mixture. Cover with cheese.
- Bake at 350 degrees F for 30 minutes.
