Tamale Pie

Yield: 8 to 10 servings

Ingredients

  • 2 pounds ground beef
  • 1 medium onion, chopped
  • 1 green bell pepper, chopped
  • 1 (4 ounce) can green chiles, chopped
  • 5 tablespoons chili powder
  • 1 small can chopped ripe olives
  • 1 can whole kernel corn, drained (optional)
  • 2 cans tomatoes
  • 1 1/2 cups cornmeal mixed with 1 1/2 cups cold water
  • 3 cups boiling salted water
  • 2 cups grated sharp Cheddar cheese

Instructions

  1. Brown meat with onions.
  2. Add bell pepper, chiles, chili powder, olives, corn (if using) and tomatoes, and simmer for about 30 minutes.
  3. Boil cornmeal mix in water, stirring constantly until thick (about 5 minutes). Spread in the bottom of a 13 x 9 x 2 inch casserole dish. Cover with meat mixture. Cover with cheese.
  4. Bake at 350 degrees F for 30 minutes.
