Guajolote (Pavo) en Mole Verde
(Turkey in Green Mole Sauce)

Ingredients

  • 1 cooked small turkey, disjointed
  • 1 (10 ounce) can tomatillos, drained
  • 1/2 cup pumpkin seeds
  • 1/4 cup blanched almonds
  • 1 can peeled green chiles
  • 2 cups rich chicken broth
  • Salt to taste
  • 1/4 cup oil
  • 1/2 cup minced parsley

Instructions

  1. Put tomatillo, pumpkin seeds, almonds, and chiles through blender or fine blade food grinder.
  2. Mix broth with ground mixture; add salt and simmer in hot oil for 10 minutes.
  3. Add turkey; cook another 10 minutes
  4. Add parsley; cook 5 more minutes before serving.
