Santa Fe Chicken

Ingredients

  • 4 (6 ounce) chicken breasts, trimmed and lightly pounded
  • 1 cup plain yogurt
  • 1 tablespoons lime juice
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground chipotle or 1/4 teaspoon ground red pepper
  • 1/2 cup chopped cilantro, divided
  • 1/8 teaspoon Kosher salt

Instructions

  1. In a non-reactive bowl combine yogurt with the spices and 2 tablespoons chopped cilantro. Mix well.
  2. Add chicken and toss to coat. Cover and let stand for 1 hour.
  3. Lightly oil grill and preheat for 5-10 minutes (or preheat broiler).
  4. Place marinated chicken pieces on heated grill or broiler pan. Cook chicken for 3-4 minutes per side basting occasionally with juices.
  5. Serve chicken sprinkled with remaining cilantro.
