Southwestern Calzone
Ingredients
Dough
- 1 1/2 cups hot water
- 2 packages instant yeast
- 2 tablespoons granulated sugar
- 1 tablespoon garlic salt
- 2 tablespoons olive oil
- 4 cups all-purpose flour
- 1 cup blue or yellow corn meal
Filling
- 6 chicken breasts, sautéed
- 3 cups red and green poblano peppers, roasted
- 3 cups mixed cheese (Cheddar-Jack)
- 3/4 cup goat cheese
- Paprika
Instructions
- Mix together water, yeast, sugar, salt and oil. Let rest 5 minutes until spongy.
- Add flour and corn meal, and mix until dough is not sticky. Knead for 5 minutes. Roll into 6 balls. Let rest for 15 minutes, then roll into 8 inch circles.
- Place equal amount of filling on half of each square. Fold the dough over the filling and press the edges together to seal.
- Place the calzones on a baking sheet and bake for 12 minutes or until they're golden brown.
- Cool the calzones on the baking sheet for 1 minute and serve them with salsa for dipping, if desired.
