Southwestern Calzone

Ingredients

Dough

  • 1 1/2 cups hot water
  • 2 packages instant yeast
  • 2 tablespoons granulated sugar
  • 1 tablespoon garlic salt
  • 2 tablespoons olive oil
  • 4 cups all-purpose flour
  • 1 cup blue or yellow corn meal

Filling

  • 6 chicken breasts, sautéed
  • 3 cups red and green poblano peppers, roasted
  • 3 cups mixed cheese (Cheddar-Jack)
  • 3/4 cup goat cheese
  • Paprika

Instructions

  1. Mix together water, yeast, sugar, salt and oil. Let rest 5 minutes until spongy.
  2. Add flour and corn meal, and mix until dough is not sticky. Knead for 5 minutes. Roll into 6 balls. Let rest for 15 minutes, then roll into 8 inch circles.
  3. Place equal amount of filling on half of each square. Fold the dough over the filling and press the edges together to seal.
  4. Place the calzones on a baking sheet and bake for 12 minutes or until they're golden brown.
  5. Cool the calzones on the baking sheet for 1 minute and serve them with salsa for dipping, if desired.
