1 1/2 cups hot water
2 packages instant yeast
2 tablespoons granulated sugar
1 tablespoon garlic salt
2 tablespoons olive oil
4 cups all-purpose flour
1 cup blue or yellow corn meal
6 chicken breasts, sautéed
3 cups red and green poblano peppers, roasted
3 cups mixed cheese (Cheddar-jack)
3/4 cup goat cheese
Mix together water, yeast, sugar, salt and oil. Let rest 5 minutes until spongy.
Add flour and corn meal, and mix until dough is not sticky. Knead for 5 minutes. Roll into 6 balls. Let rest for 15 minutes, then roll into 8-inch circles.
Place equal amount of filling on half of each square. Fold the dough over the filling and press the edges together to seal.
Place the calzones on a baking sheet and bake for 12 minutes or until they're golden brown.
Cool the calzones on the baking sheet for 1 minute and serve them with salsa for dipping, if desired.
