Tostadas de Tinga

Flavorful chicken in a delicious chipotle salsa served on a tostada with your choice of toppings.

Tostadas de Tinga

Ingredients

Salsa

  • 5 or 6 tomatoes
  • 4 canned chipotle chiles in adobo sauce
  • 2 cloves garlic
  • Small chunk of onion
  • 2 peppercorns
  • 1 teaspoon dried oregano
  • Salt, to taste

Chicken

  • 1 chicken, cooked and shredded
  • 1/2 medium size onion, sliced
  • 2 Roma tomatoes, chopped

Instructions

  1. Put all salsa ingredients into a blender and blend well.
  2. Heat a little vegetable oil in a large skillet.
  3. Add onion and tomatoes to pan. When soft, add shredded chicken, stirring well while cooking.
  4. Add salsa and let simmer until some of the liquid evaporates.
  5. Serve on tostadas with whatever toppings you like, such as lettuce, queso fresca, sliced jalapeños, sour cream and cilantro.
