Rio Grande Dressing
- 1 (10 ounce) can Ro*Tel Diced Tomatoes and Green Chilies
- 1/2 cup olive oil
- 1/4 cup red wine vinegar
- 2 teaspoons spicy brown mustard
- 1 teaspoon minced garlic
- 1 teaspoon fresh ground black pepper
- 1 teaspoon paprika
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon salt
- Combine all ingredients in a blender. Pulse on/off for 30 seconds
or until thoroughly blended.
Makes about 1 3/4 cups dressing.
Dressing is best when used the same day.
