Southwest Pasta Salad

Wagon wheel pasta, black beans and zesty Ro*Tel Tomatoes with sour cream for a Southwest-inspired pasta salad.

Southwest Pasta Salad

Ingredients

  • 8 ounces dry rotelle (wagon wheel) pasta, uncooked
  • 1 (15 ounce) can Ranch Style® Black Beans, drained, rinsed
  • 1 (10 ounce) can Ro*Tel® Original Diced Tomatoes & Green Chilies, undrained
  • 1 cup reduced fat sour cream
  • 1/2 cup chopped green bell pepper
  • 1/4 cup chopped red onion
  • 1/2 cup shredded reduced fat Cheddar cheese

Instructions

  1. Cook pasta according to package directions. Drain; rinse under cold water until cool. Set aside.
  2. Meanwhile, stir together beans, undrained tomatoes, sour cream, pepper and onion in large bowl.
  3. Add pasta and cheese; toss to combine.
  4. Serve at room temperature.
