New Mexico Enchilada Sauce Dry Mix
Keep this on hand to make red enchilada sauce as you need it. It is so much better than the sauce in a can and much less expensive also!
- 2 1/2 cups flour
- 1/2 cup cornstarch
- 1 teaspoon paprika
- 8 ounces chili powder
- 1 tablespoon garlic powder
- 1 1/2 tablespoons kosher or sea salt
- 1/2 teaspoon cumin
- 1/2 teaspoon oregano
- Mix all ingredients together.
- Store in an airtight container.
To use the mix:
2/3 cup dry mix
4 cups water
Cook together in saucepan over medium heat until well blended and thickened.
To make half as much, use 1/3 cup dry mix to 2 cups water. Cook as above.
