Pumpkin Bread with Cream Cheese Filling

Ingredients

Filling

  • 8 ounces cream cheese, softened
  • 1 egg
  • 1/2 cup granulated sugar
  • 1/2 cup chopped pecans

Dough

  • 3 1/2 cups flour
  • 2 tablespoons baking soda
  • 1 1/2 teaspoons salt
  • 2 teaspoons cinnamon
  • 1 teaspoon nutmeg
  • 3 cup granulated sugar
  • 1 cup vegetable oil
  • 4 eggs
  • 2/3 cup water
  • 2 cups pumpkin

Instructions

  1. Filling: Mix ingredients in order listed and set aside.
  2. Dough: Sift dry ingredients together.
  3. Mix pumpkin, water, oil and eggs together. Pour into dry mixture and mix well.
  4. Pour 1/2 of batter into 2 greased 9 x 5-inch loaf pans.
  5. Next pour a layer of filling into each pan (using all of the filling).
  6. Finish topping with remaining bread batter.
  7. Bake at 350 degrees F for 1 hour and 15 minutes, or until a wooden pick inserted in the middle of the loaf comes out clean.
  8. Cool before removing from pans.
