Cranberry Fruit Mold

This easy-to-do fat free, low sodium Cranberry Fruit Mold will give an extra special touch to a family meal or your next gathering of friends. It's also a good source of vitamin C.

Cranberry Fruit Mold

Yield: 9 servings

Ingredients

  • 2 cups boiling water
  • 1 (6 ounce) box Jell-O Brand Cranberry Flavor Sugar Free Low Calorie Gelatin
  • 1 1/2 cups cold diet ginger ale or water
  • 2 cups green and/or red seedless grapes halves
  • 1 (11 ounce) can mandarin orange segments, drained

Instructions

  1. Stir boiling water into gelatin in large bowl at least 2 minutes until completely dissolved.
  2. Stir in cold diet ginger ale.
  3. Refrigerate about 1 1/2 hours or until thickened (spoon drawn through leaves definite impression).
  4. Stir in grapes and oranges. Pour into a 6 cup mold sprayed with cooking spray.
  5. Refrigerate 4 hours or until firm.
  6. Unmold.
  7. Store leftover gelatin mold in refrigerator.
