Cranberry Fruit Mold
This easy-to-do fat free, low sodium Cranberry Fruit Mold will give an extra special touch to a family meal or your next gathering of friends. It's also a good source of vitamin C.
Yield: 9 servings
Ingredients
- 2 cups boiling water
- 1 (6 ounce) box Jell-O Brand Cranberry Flavor Sugar Free Low Calorie Gelatin
- 1 1/2 cups cold diet ginger ale or water
- 2 cups green and/or red seedless grapes halves
- 1 (11 ounce) can mandarin orange segments, drained
Instructions
- Stir boiling water into gelatin in large bowl at least 2 minutes until completely dissolved.
- Stir in cold diet ginger ale.
- Refrigerate about 1 1/2 hours or until thickened (spoon drawn through leaves definite impression).
- Stir in grapes and oranges. Pour into a 6 cup mold sprayed with cooking spray.
- Refrigerate 4 hours or until firm.
- Unmold.
- Store leftover gelatin mold in refrigerator.
