Spoon Bread with Green Chiles

Spoon bread is a soft, pudding-like side dish made with cornmeal. Here it's mixed with green chiles and fresh cilantro.

Ingredients

  • 1 (12 ounce) can Nestlé® Carnation® Evaporated Milk
  • 3/4 cup water
  • 1/2 cup yellow cornmeal
  • 1/2 teaspoon salt
  • 1 (4 ounce) can diced green chiles
  • 1 tablespoon granulated sugar
  • 1 tablespoon chopped fresh cilantro
  • 2 large eggs
  • 1/2 cup shredded Cheddar cheese

Instructions

  1. Heat oven to 350 degrees F. Grease a 1 quart casserole dish.
  2. Combine evaporated milk, water, cornmeal and salt in large saucepan. Cook, stirring constantly, over medium-low heat until mixture is thickened.
  3. Remove mixture from heat.
  4. Stir in chiles, sugar and cilantro.
  5. Add eggs one at a time, stirring well after each addition.
  6. Pour into prepared ovenproof dish.
  7. Bake, uncovered, for 20 to 25 minutes or until knife inserted near center comes out clean.
  8. Sprinkle with cheese; bake for additional 2 to 3 minutes or until cheese is melted.
  9. Serve with salsa.
