Pina Colada Tofu Pie

Ingredients

Crust

  • 1 regular or Graham cracker crust

Filling

  • 1 pound tofu, cut up and drained
  • 1 1/2 tablespoons vegetable oil
  • 1/3 cup plus 2 tablespoons honey
  • 1 1/2 teaspoons cornstarch
  • 1 teaspoon vanilla extract
  • 1 1/4 cups drained crushed pineapple
  • 3/4 cup shredded unsweetened coconut

Instructions

  1. Blend all filling ingredients well.
  2. Bake in prepared crust at 350 degrees F for 20 to 30 minutes.
  3. Let cool to set.
