Raspberry Tofu Cheesecake

Ingredients

  • 1 cup crushed Graham crackers
  • 1/2 cup honey
  • 1/2 cup sugar
  • 1 cup red raspberries
  • 1/4 cup brown sugar
  • 1/4 cup lemon juice
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 2 1/3 pounds tofu

Instructions

  1. Grease a pie plate and press the Graham cracker crumbs to the bottom of it to form a base.
  2. Run the remaining ingredients through a blender and pour them into the pie shell.
  3. Bake the pie at 350 degrees F for 55 minutes.
  4. Allow to chill for 2 hours before serving.
