Tofu Breakfast Muffins
- 1 pound extra-firm tofu
- 1/2 cup orange juice
- 2 tablespoons honey
- 1/4 cup granulated sugar or fructose
- 1 teaspoon vanilla extract
- 1 ripe banana
- 1 1/4 cups rolled oats
- 1/2 cup raisins
- 1 tablespoon baking powder
- 1 teaspoon baking soda
- 1 cup whole wheat flour
- Wet Ingredients: Blend together in food processor or blender.
- Dry Ingredients: Mix together.
- Mix wet ingredients with dry.
- Spoon into muffin cups and bake at 375 degrees F for 25 minutes.
