Tofu Breakfast Muffins

Ingredients

Wet Ingredients

  • 1 pound extra-firm tofu
  • 1/2 cup orange juice
  • 2 tablespoons honey
  • 1/4 cup granulated sugar or fructose
  • 1 teaspoon vanilla extract
  • 1 ripe banana

Dry Ingredients

  • 1 1/4 cups rolled oats
  • 1/2 cup raisins
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1 cup whole wheat flour

Instructions

  1. Wet Ingredients: Blend together in food processor or blender.
  2. Dry Ingredients: Mix together.
  3. Mix wet ingredients with dry.
  4. Spoon into muffin cups and bake at 375 degrees F for 25 minutes.
