Tofu Spaghetti Sauce
Ingredients
- 1 pound tofu, chopped into small pieces
- 1/4 cup soy sauce
- 1/2 teaspoon garlic powder
- 2 tablespoons oil (optional)
- 1 medium onion, chopped
- 2 carrots, diced
- 1 green bell pepper, diced
- 2 cloves garlic, minced
- 6 cups tomato sauce
- 1/2 teaspoon oregano
- 1 tablespoon or more basil
- 1/2 cup chopped parsley (optional)
Instructions
- Marinate tofu in soy sauce, garlic powder and oil for 30 minutes or longer.
- Sauté onions, carrots, pepper and garlic. Add tomato sauce and spices. Simmer for 20 minutes over low heat.
- Add marinated tofu and simmer for 10 minutes.
- Serve over hot spaghetti.
