Turkey Pasta with Cream Sauce
Ingredients
- 1 tablespoon butter
- 1 tablespoon all-purpose flour
- 3/4 cup heavy cream
- Salt and pepper to taste
- Pinch of nutmeg
- 1 pound pasta
- 2 cloves garlic minced
- 2 tablespoons olive oil
- 2 zucchini, sliced thin
- 1 pound cooked turkey, cubed
- Grated Parmesan or Romano cheese
Instructions
- Prepare the roux by heating the butter in a small sauce pan over medium heat. Add the flour and stir until it is light brown.
- In another pan, heat the cream. When it is hot, add the roux and stir until thickened. Add the seasonings and remove from heat.
- At this point, cook pasta according to directions.
- Sauté the garlic in the oil until light brown.
- Add the zucchini and turkey and sauté until hot. Add more seasoning, if needed.
- Toss the turkey and zucchini into cooked hot pasta, and add the cream sauce. Top with grated cheese.
