  • 8 ounces butter
  • 1 pound granulated sugar
  • 5 eggs
  • 12 ounces flour
  • 2 teaspoons cream of tartar
  • Pinch of salt
  • 1 tablespoon milk
  • 1 teaspoon baking soda
  • 6 ounces currants
  • 1 teaspoon lemon juice


  1. Cream together butter and sugar, then add the beaten eggs, flour, cream of tartar and salt.
  2. Dissolve the baking soda in the milk and beat this in.
  3. Finally add the lemon juice and currants.
  4. Pour into a greased pan and bake at 325 degrees F for about 20 to 30 minutes.
