- 1 pound pitted dry prunes, cooked
- 1 cup liquid from cooked prunes*
- 1/2 cup granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon grated lemon rind
- 1/2 teaspoon cinnamon
- Cover prunes with cold water; stir in sugar, and bring to a boil. Reduce heat
and cook slowly, stirring constantly until smooth and thick.
- Remove from heat and add lemon juice, grated rind and cinnamon.
Makes enough filling for 3 dozen kolaches.
Apricots may be used in place of prunes.
