Prune Filling

Ingredients

  • 1 pound pitted dry prunes, cooked
  • 1 cup liquid from cooked prunes*
  • 1/2 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon grated lemon rind
  • 1/2 teaspoon cinnamon

Instructions

  1. Cover prunes with cold water; stir in sugar, and bring to a boil. Reduce heat and cook slowly, stirring constantly until smooth and thick.
  2. Remove from heat and add lemon juice, grated rind and cinnamon.

Makes enough filling for 3 dozen kolaches.

Apricots may be used in place of prunes.
