Ingredients

  • Maraschino cherries, cut in half
  • 3 cups all-purpose flour
  • 8 egg yolks
  • 1/2 pound sweet butter
  • 1/2 pound (2 cups) sifted confectioners' sugar
  • Rind of 1 lemon

Instructions

  1. Reserve 1 yolk for brushing.
  2. In a large bowl, beat 7 egg yolks until fluffy; add butter and sugar, beat well. Add flour and lemon rind. Mix well. Chill.
  3. Form into balls. Brush with reserved slightly beaten egg yolk. Gently push a piece of cherry into cookie center.
  4. Bake at 375 degrees F until light brown, about 8 to 10 minutes.
