Kolokythia Krokettes (Zucchini Pancakes)



  • 3 cups grated zucchini
  • 1 teaspoon salt
  • 3 eggs
  • 1 cup grated feta cheese
  • 1 1/2 teaspoons minced fresh mint leaves
  • 3 tablespoons flour
  • Pepper
  • Butter


  1. Mix zucchini with salt and let stand 1 hour. Squeeze out moisture.
  2. Beat eggs. Add zucchini, cheese, mint, flour and pepper to taste.
  3. Fry 1 tablespoon at a time in butter over medium heat. Brown on both sides.

Makes 18 pancakes or 6 servings.
