Kolokythia Krokettes (Zucchini Pancakes)
- 3 cups grated zucchini
- 1 teaspoon salt
- 3 eggs
- 1 cup grated feta cheese
- 1 1/2 teaspoons minced fresh mint leaves
- 3 tablespoons flour
- Mix zucchini with salt and let stand 1 hour. Squeeze out moisture.
- Beat eggs. Add zucchini, cheese, mint, flour and pepper to taste.
- Fry 1 tablespoon at a time in butter over medium heat. Brown on both sides.
Makes 18 pancakes or 6 servings.
