Spanakopeta (Spinach Pie)


  • 3 scallions, chopped
  • 1 cup butter, melted, divided
  • 5 eggs, beaten
  • 3 (10 ounce) packages frozen spinach, chopped, thawed and pressed dry
  • 1 1/2 cups feta cheese, crumbled
  • 1/2 cup cottage cheese
  • 16 pastry sheets or strudel leaves (filo)


  1. Sauté scallions in 2 tablespoons melted butter; combine with eggs, spinach, and cheese.
  2. Place 8 pastry sheets, each brushed with melted butter, in a greased 13 x 9 x 2-inch pan. Place spinach mixture evenly over pastry sheets. Top with remaining pastry sheets, having top sheet well buttered.
  3. Bake at 350 degrees F for 1 hour and 15 minutes.
  4. Cut into squares or diamond shapes. Serve hot.

Yield: 24 servings

Spanakopeta freezes well.
