Spanakorizo (Spinach with Rice)


  • 1 pound spinach
  • 2 medium onions, chopped
  • 1 tablespoon parsley, chopped
  • 1/4 cup rice
  • 1/4 cup olive oil
  • Salt and pepper
  • Mint leaves


  1. Sauté onions in heated oil until golden.
  2. Add the spinach which has been thoroughly washed and drained. Add a little water and bring to boil.
  3. Sprinkle parsley and add the washed rice. Stir; season to taste; allow to simmer for about 15 minutes, or until done.
