Spanakorizo (Spinach with Rice)
- 1 pound spinach
- 2 medium onions, chopped
- 1 tablespoon parsley, chopped
- 1/4 cup rice
- 1/4 cup olive oil
- Salt and pepper
- Mint leaves
- Sauté onions in heated oil until golden.
