Tahini with Parsley and Lemon


  • 3/4 cup tahini (sesame seed paste)
  • 1/2 cup lemon juice
  • 1 clove garlic
  • 1 cup Italian parsley, roughly chopped
  • Salt and freshly ground pepper


  1. In food processor fitted with steel blade, puree tahini, lemon juice and garlic until smooth. If tahini is too thick, add a few tablespoons of water.
  2. Add parsley and salt and pepper to taste and pulse until blended.
  3. Adjust seasonings and serve.

Makes about 1 1/2 cups.
