Irish Potato Cake with Caramel Frosting



Caramel Frosting


  1. Toss nuts and raisins with 1/2 cup of the flour.
  2. Cream butter and sugar.
  3. Add potatoes, extracts and spices and mix well. Add milk.
  4. Combine remaining flour, baking soda and cocoa; add to creamed mixture and add eggs.
  5. Add prepared nuts and raisins. Mix well.
  6. Bake at 350 degrees F for 1 hour 30 minutes until done.
  7. Caramel Frosting: Combine first 4 ingredients and boil 3 to 5 minutes.
  8. Add confectioners' sugar slowly, beating until thick.
