Irish Potato Pudding



  • 6 to 8 potatoes
  • 1 teaspoon vanilla extract
  • 3/4 cup sugar
  • 1 pound butter


  1. Boil potatoes until tender. Drain.
  2. Mash potatoes.
  3. Mix in vanilla extract, sugar and butter.
  4. Place in a baking dish.
  5. Bake at 350 degrees F until dried out.
