Italian Porketta

Ingredients

  • 1 (2 to 4 pound) boneless pork roast
  • 3 tablespoons dill seed
  • 1 tablespoon fennel seed
  • 1/4 teaspoon oregano
  • 1 teaspoon lemon pepper
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon garlic powder

Instructions

  1. Combine seasonings together and coat roast with mixture.
  2. Roast in a shallow pan at 325 degrees F for 45 minutes to one hour, until meat thermometer registers 155 to 160 degrees F.
  3. Let roast rest 5 to 10 minutes before carving.
