Mexican Cheesecake (Pie de Queso)

This tastes exactly like what you would get in a Mexican bakery.


  • 4 eggs
  • 1 (8 ounce) package cream cheese, softened
  • 1 (14 ounce) can sweetened condensed milk
  • 1 teaspoon vanilla or almond extract
  • 2 Graham cracker crusts


  1. Heat oven to 350 degrees F.
  2. Puree the eggs, cream cheese, milk and extract in a blender. The mixture must be smooth with no lumps.
  3. Pour batter evenly into two pie crusts.
  4. Bake for about 20 minutes.
