Mexican Fruit Cake

Mexican Fruit Cake recipe

This is my Grandmother's recipe. ~ Valerie Morris

Ingredients

Cake

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 3 eggs
  • 1 (20 ounce) can crushed pineapple in juice
  • 2 teaspoons baking soda
  • 1 cup pecans or walnuts, chopped
  • 1/4 cup oil

Icing

  • 2 cups confectioners' sugar
  • 1 stick (1/2 cup) butter, melted
  • 8 ounces cream cheese, softened
  • 1 teaspoon vanilla extract

Instructions

  1. Heat oven to 350 degrees F if using a metal baking dish or to 325 degrees F if using a glass baking dish.

Cake

  1. Mix all ingredients. Pour into a 9 x 13-inch baking dish.
  2. Bake for 40 minutes.

Icing

  1. Combine icing ingredients.
  2. Poke holes in warm or cool cake, then spread the Icing.
  3. Garnish with nuts, if desired.
