Mexican Fruit Cake
This is my Grandmother's recipe. ~ Valerie Morris
Ingredients
Cake
- 2 cups all-purpose flour
- 2 cups granulated sugar
- 3 eggs
- 1 (20 ounce) can crushed pineapple in juice
- 2 teaspoons baking soda
- 1 cup pecans or walnuts, chopped
- 1/4 cup oil
Icing
- 2 cups confectioners' sugar
- 1 stick (1/2 cup) butter, melted
- 8 ounces cream cheese, softened
- 1 teaspoon vanilla extract
Instructions
- Heat oven to 350 degrees F if using a metal baking dish or to 325 degrees F if using a glass baking dish.
Cake
- Mix all ingredients. Pour into a 9 x 13-inch baking dish.
- Bake for 40 minutes.
Icing
- Combine icing ingredients.
- Poke holes in warm or cool cake, then spread the Icing.
- Garnish with nuts, if desired.
