Tacos de Papa y Queso (Potato Tacos with cheese)

Tacos de Papa recipe

Ingredients

  • Leftover mashed potatoes*
  • Salt and pepper
  • Onion powder
  • Corn tortillas
  • Oaxaca cheese, shredded
  • Shredded lettuce (garnish)
  • Sour cream or crema (garnish)
  • Salsa (garnish)

Instructions

  1. Mix mashed potatos with salt and pepper and onion powder.
  2. Heat each corn tortilla just before fililng and folding so that it doesn't crack when folding.
  3. Add mashed potatoes to each corn tortilla, being careful not to overstuff so that the filling doesn't leak out. Add cheese to the top of the mashed potatoes. Fold over and fry in oil until crispy.
  4. Serve with lettuce, sour cream or crema and salsa or any other toppings desired.

Notes

* Or boiled potatoes, mashed with a little butter or Ranch dressing, salt and pepper
