Sweet Rice with Cinnamon
(Roz Mafooar — Morocco)



  • 1 1/3 cups regular rice
  • 2 2/3 cups water
  • 1/2 teaspoon salt
  • 1/4 cup butter or margarine
  • 1/4 cup confectioners' sugar
  • Ground cinnamon


  1. Heat rice, water and salt to boiling in 3-quart saucepan, stirring once or twice; reduce heat. Cover and simmer 14 minutes without lifting cover or stirring. Remove from heat.
  2. Fluff rice lightly with fork; cover and let steam 5 to 10 minutes.
  3. Stir in margarine and confectioners' sugar.
  4. Sprinkle with cinnamon; serve warm.

Yield: 6 servings
