Zhug

This is the most popular spice mixture of Yemen, and it has been adapted to tastes throughout the Middle-East. It can be purchased at ethnic delicatessen stores, or you can make it at home

Ingredients

  • 1 cup fresh chile peppers
  • 1/2 cup parsley
  • 1/2 cup coriander leaves
  • 1 tablespoon minced garlic
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon ground cumin
  • Pinch of ground cardamom

Instructions

  1. Puree together chile peppers, parsley and coriander leaves.
  2. Add garlic and spices.

Keep in mind that this flavorful blend is fiery hot and should be used only in very small quantities.
