Jumping Johnnies (Australian)


  • 3 eggs
  • 4 tablespoons sugar
  • Grated rind of 1 lemon
  • 1/2 cup milk
  • 2 1/2 cups self-rising flour


  1. Whisk well together eggs and sugar, add grated lemon rind, milk, and flour. Mix well.
  2. Fry by teaspoonsful in boiling fat, roll in confectioners sugar, and eat hot or cold. The Johnnies will "jump" (turn themselves) when cooked on one side if there is enough fat.
