Pebre (Chilean Hot Pepper Sauce)
- 1 medium onion, finely chopped
- 1 to 2 cloves garlic, finely chopped
- 3 tablespoons finely chopped fresh cilantro (coriander)
- 2 tablespoons finely chopped fresh parsley
- 1 to 6 fresh hot green chile peppers, seeded and finely chopped
- 4 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt, to taste
- Combine all ingredients in a small bowl and allow to sit at room temperature
for at least 1 hour.
Makes about 1 cup.
