Pebre (Chilean Hot Pepper Sauce)

Ingredients

  • 1 medium onion, finely chopped
  • 1 to 2 cloves garlic, finely chopped
  • 3 tablespoons finely chopped fresh cilantro (coriander)
  • 2 tablespoons finely chopped fresh parsley
  • 1 to 6 fresh hot green chile peppers, seeded and finely chopped
  • 4 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt, to taste

Instructions

  1. Combine all ingredients in a small bowl and allow to sit at room temperature for at least 1 hour.

Makes about 1 cup.
