Thai Sweet-Chili Sauce



  • 1/2 cup vinegar
  • 1 1/2 cups water
  • 1 1/2 cups sugar
  • 1 teaspoon salt
  • 2 cloves pickled garlic, sliced
  • 3 or 4 dry Guajillo chiles

  1. Soak dry chiles in hot water until soft, seeded.
  2. Bring all ingredients to a boil.
  3. Cool the sauce and blend until smooth.
  4. Pour the sauce through a strainer.
