Orange Ginger Pork Roast
1 (3 or 4 pound) boneless pork roast
1 teaspoon dry mustard
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon ground ginger
Orange Glaze
Combine mustard, salt, pepper and ginger. Rub well into meat. Place roast
on rack in roasting pan. Insert meat thermometer so that bulb is in center of
the thickest part of the meat. Bake uncovered at 325 degrees F for 35 to 40
minutes per pound until heat registers 170 degrees F on thermometer. During
last 30 minutes of cooking, baste with glaze every 10 minutes. Allow to stand
10 minutes before carving.
Orange Glaze:
1 cup orange marmalade
1/4 cup light corn syrup
2 tablespoons lemon juice
1/2 teaspoon dry mustard
1/2 teaspoon ground ginger
Combine all the ingredients in a small saucepan and cook over medium heat
for 5 minutes. Stir often. Use as glaze for pork roast.
