Roasted Carrots with Honey and Butter

After roasting, the carrots are coated with a mixture of honey, butter and herbs.

Equipment

  • Air Fryer

Ingredients

  • 16 ounces baby carrots*
  • 2 teaspoons extra-virgin olive oil
  • Sprinkle of salt
  • 1/4 teaspoon pepper
  • 1 1/2 tablespoons butter, melted
  • 1 tablespoon honey
  • 1 tablespoon fresh parsley or basil (optional)

Instructions

  1. Toss cleaned carrots with olive oil, salt and pepper.
  2. Preheat air fryer to 400 degrees F.
  3. Arrange carrots in an even layer n the air fryer rack or basket.
  4. Roast carrots for about 15 minutes oir until browned and they reach your desired tenderness. They do not have to be flipped.
  5. Mix together melted butter, honey and fresh herbs (if using).
  6. Toss the carrots with the honey mixture and sprinkle on extra herbs and/or salt and pepper if desired.

Notes

* If using regular large size carrots, cut into even 2 inch pieces.
