Blueberry Nut Bread

Ingredients

  • 1 pint blueberries, rinsed but not dried
  • 3 cups + 3 tablespoons whole wheat flour, divided
  • 2 cups granulated sugar
  • 1 cup chopped pecans
  • 1/2 cup vegetable oil
  • 4 eggs
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon salt

Instructions

  1. Heat the oven to 350 degrees F. Grease and flour* two 9 x 5 inch loaf pans.
  2. In a medium bowl, combine the blueberries and 3 tablespoons flour. Toss to coat evenly.
  3. In a large bowl, combine the remaining ingredients. Mix well.
  4. Carefully fold in the blueberries.
  5. Spoon the batter into the prepared loaf pans.
  6. Bake for 55 to 60 minutes or until a wooden pick inserted into the center comes out clean.
  7. Allow to cool slightly and then remove to a wire rack to cool completely.
