Kiwi Cherry Bread

Ingredients

  • 3/4 cup brown sugar, packed
  • 1/2 cup soft shortening
  • 2 eggs
  • 1 cup cooked kiwi, drained and chopped
  • 1/4 cup kiwi juice
  • 1/2 cup green candied cherries, halved
  • 2 1/2 cups sifted all-purpose flour
  • 3 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt

Instructions

  1. Heat oven to 350 degrees F. Grease and flour* a 9 x 5 inch loaf pan.
  2. Beat together sugar, shortening and eggs until well blended.
  3. Stir in kiwi, juice and cherries.
  4. Sift dry ingredients; blend into kiwi mixture.
  5. Turn into prepared pan.
  6. Bake for 1 hour or until done.
  7. Cool in pan 5 minutes, then turn out on rack to complete cooling.

Notes

* For best results, use our Pan Release!

This bread slices better the second day.
