Easy Pumpkin Cake
Ingredients
- 1 (18.25 ounce) box butter recipe yellow cake mix*
- 1 (16 ounce) can pumpkin or pumpkin pie filling
- 4 eggs
- 1/4 cup Wesson oil
- 1/4 cup water
- 3/4 cup granulated sugar
- 1/2 teaspoon nutmeg
- 1 1/2 teaspoons cinnamon
Instructions
- Heat oven to 325 degrees F.
- Combine all ingredients in bowl of electric mixer. With electric mixer, blend all ingredients until moistened on low speed, then 2 minutes on medium speed.
- Pour into greased and floured** Bundt or tube cake pan and bake for 45 to 60 minutes.
- Let cool completely before removing from pan as this is a very moist cake.
Notes
* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
