Fig Preserves Cake
This cake can also be baked in a greased and floured 10-inch tube pan at 350 degrees F for 1 1/4 hours.
Ingredients
Cake
- 2 cups all-purpose flour, sifted
- 1 1/2 cups granulated sugar
- 1 tablespoon salt
- 1 tablespoon baking soda
- 1 tablespoon ground cloves
- 1 tablespoon nutmeg
- 1 tablespoon cinnamon
- 1 cup oil
- 3 eggs
- 1 cup buttermilk
- 1 cup fig preserves, store bought or homemade
- 1 cup chopped nuts
- 1 tablespoon vanilla extract
Sauce
- 1 cup granulated sugar
- 1 stick (1/2 cup) butter
- 1 tablespoon vanilla extract
- 1/2 cup buttermilk
- 1/2 tablespoon baking soda
Instructions
- Heat oven to 325 degrees F.
- Cake: Sift together flour, sugar, salt, baking soda and spices.
- Add oil and beat well.
- Add eggs one at a time, beating well after each addition.
- Add buttermilk gradually.
- Add figs, nuts and vanilla extract. Pour into greased 13 x 9 x 2-inch pan.
- Bake for 45 minutes.
- When cake is done while hot pour sauce over cake in pan.
- Sauce: Mix ingredients and boil for 3 minutes. Pour on cake while sauce is hot. Do not remove cake from pan.
