Fig Preserves Cake

This cake can also be baked in a greased and floured 10-inch tube pan at 350 degrees F for 1 1/4 hours.

Ingredients

Cake

  • 2 cups all-purpose flour, sifted
  • 1 1/2 cups granulated sugar
  • 1 tablespoon salt
  • 1 tablespoon baking soda
  • 1 tablespoon ground cloves
  • 1 tablespoon nutmeg
  • 1 tablespoon cinnamon
  • 1 cup oil
  • 3 eggs
  • 1 cup buttermilk
  • 1 cup fig preserves, store bought or homemade
  • 1 cup chopped nuts
  • 1 tablespoon vanilla extract

Sauce

  • 1 cup granulated sugar
  • 1 stick (1/2 cup) butter
  • 1 tablespoon vanilla extract
  • 1/2 cup buttermilk
  • 1/2 tablespoon baking soda

Instructions

  1. Heat oven to 325 degrees F.
  2. Cake: Sift together flour, sugar, salt, baking soda and spices.
  3. Add oil and beat well.
  4. Add eggs one at a time, beating well after each addition.
  5. Add buttermilk gradually.
  6. Add figs, nuts and vanilla extract. Pour into greased 13 x 9 x 2-inch pan.
  7. Bake for 45 minutes.
  8. When cake is done while hot pour sauce over cake in pan.
  9. Sauce: Mix ingredients and boil for 3 minutes. Pour on cake while sauce is hot. Do not remove cake from pan.
